•Sugars are soluble and sticky ingredients and their granulation may be difficult. •Granulation performance of sugars in high shear granulation was evaluated. •The use of a mixer torque rheometer was used to assess optimal amount of binder. •The partial solubilization of the sugars increases the viscosity of the liquid bridges. • Liquid amount required for the process is function of the sugar thickening power.
