Pectin was chemically modified with different amounts of trisodium trimetaphosphate (STMP) in aqueous solution (pH = 12), thereby giving a material with reduced water solubility. The physiochemical characterization of this new material was carried out through Fourier transform infrared and thermogravimetric analyses.
